WE ASKED ANTON EDELMANN TO TAKE SOME TIME OUT OF HIS BUSY SCHEDULE TO GIVE US SOME MOUTH WATERING SUGGESTIONS FOR HEALTHY LIGHT MEALS � PERFECT TO TRY OUT ON CHILLY WINTER EVENINGS
Born in Germany, Anton Edelmann discovered his passion for cooking early in life, bringing him to London where he has become one of the UK's most celebrated and highly respected chefs. His career has taken to him to many illustrious establishments including The Dorchester, where he worked under Anton Mosimann, the Portman Inter-Continental, Grosvenor House and latterly the Savoy, where he held the position of Maitre Chef des Cuisines for 20 years.
His current challenge is being the first principal chef for Directors Table, the fine dining division of contract caterer Sodexho. His role involves developing menus and signature dishes for city clients, training and motivating the teams of chefs at Directors Table and running master classes for clients and staff. As part of this role, he recently launched the Anton Edelmann Culinary Academy whose aim is to develop and enhance the skills of Directors Table's chefs. In his spare time he also plays an active role in the running of Brasserie St Quentin, a successful Knightsbridge brasserie of which he is a co-owner.
